My favourite healthy and quick lunch is a salad. They are easy to make after a busy morning working, and fill you up for the rest of the afternoon, leaving you feeling great and motivated. I have tried and tested lots of salads and come up with my favourite recipe. It has plenty of protein and vitamins and takes under ten minutes to prepare, so here it is: Amy's Superfood Salad



Ingredients:

Dark green leafy salad mix
Grapes
Cherry Tomatoes
Pumpkin Seeds
Pine Nuts
Pomegranate Seeds
Grilled Chicken

Dressing:
Olive Oil
Half a lemon






Method:

1) Chop a handful of cherry tomatoes and grapes and mix into a bowl with the leafy greens.




2) Either chop the pine nuts or use them whole, and add these to the salad bowl, along with the pumpkin and pomegranate seeds. Sprinkle as much of these ingredients onto your salad as you like.




3) Then top with grilled chicken

4) To make the dressing simply squeeze the juice of half a lemon and mix with a little olive oil and
drizzle over your salad.




It's as simple as that to make a delicious salad that not only looks beautiful but also tastes great!
